March Madness, one my favorite sporting events of the year. I love filling out a bracket and usually do pretty well, but not this year. None of the final four teams I picked made it, BOO!! But I still love watching some NCAA underdogs kicking butt.
In honor of March Madness, I decided to make a meal perfect for eating during these last few games. Greek food is so delicious, and usually fairly low in calories. I start out with some Jalapeño Hummus, once you see how easy it is you’ll never buy hummus at the store. Then I’ll make Chicken Gyros, so easy and so delicious. I love regular gyros, but they aren’t the best for you. By using chicken instead, it cuts the calories and fat down…and you will feel much better about yourself afterwords. Then instead of fries on the side, I’ll whip up some Lemon Roasted Greek Potatoes. These are a great alternative to fries, and are bursting with Greek flavors.

Hummus, ohhh so delicious. It’s one of my favorite snacks, and once I learned how easy it was so make at home I hardly ever spend the money on store bought. Tahini, which is paste made from ground sesame seeds, is an essential ingredient and makes such a difference. It’s a little expensive (around $7), but it will last forever and makes the hummus authentic.
This is an easy version of jalapeño hummus, but I also have a Roasted Jalapeño and Garlic Hummus too that takes a couple more steps. Hopefully I’ll get it posted later this week!
Just throw everything into the food processor and enjoy!
Serve with Homemade Pita Chips, which are another healthier and cheaper version than store bought! It’s also delicious with veggies to keep it a gluten free snack!
When deciding which recipe to post first to Hopefully Healthy, chicken gyros were an easy choice. It’s so delicious, extremely easy and low in calories. Just combine a few ingredients to marinade, then let it sit and soak up all those delicious Greek flavors.
Throw in the oven or on the grill and put together the sandwich. I love regular gyros so much, but they are impossible to make at home and super high in fat. These have become a year round staple in our house, and hopefully for all of you! Serve with Lemon Roasted Greek Potatoes and Mediterranean will become your new favorite cuisine!
Who needs fries when you can have garlicky, lemony crispy potatoes. This recipe is so easy, and can be prepped while the Chicken Gyros are marinating. Just combine everything in a big bowl then dump it all onto a big rimmed baking sheet.
After they’re done cooking, toss a little extra vinaigrette, feta and parsley for unforgettable tatters! You’re family will never want those frozen fries from a bag after they taste these.
