Instructions
  1. Add all ingredients minus lamb, artichokes and zucchini into a large bowl.
  2. Whisk until well combined.
  3. Season meat with salt and pepper. Add meat and toss until each piece is coated in the marinade. Refrigerate for at least 30 minutes, but the longer the better.
  4. Soak skewers in water while the meat marinates.
  5. Skewer meat and vegetables, alternating between the three.
  6. Grill skewers to preferred done-ness. I like mine a little pink, which is about 5 minutes a side.
  7. Serve with tzatziki and pita bread.
