Ingredients
- 1 lb leg of lamb stew meat works too
- 1/4 cup non-fat greek yogurt
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 tbsp dijon mustard
- 1 tbsp dried oregano
- 1/4 cup fresh rosemary chopped
- 2 garlic cloves minced
- 10 oz can artichoke hearts
- 1 large zucchini large slice
- salt and pepper
Servings: people
Instructions
- Add all ingredients minus lamb, artichokes and zucchini into a large bowl.
- Whisk until well combined.
- Season meat with salt and pepper. Add meat and toss until each piece is coated in the marinade. Refrigerate for at least 30 minutes, but the longer the better.
- Soak skewers in water while the meat marinates.
- Skewer meat and vegetables, alternating between the three.
- Grill skewers to preferred done-ness. I like mine a little pink, which is about 5 minutes a side.
- Serve with tzatziki and pita bread.
