Ingredients
- 2 russet potatoes cubed
- 1 cup chicken broth
- 1/4 cup lemon juice 1 large lemon
- 1/4 cup olive oil
- 1 small shallot finely chopped
- 3 garlic cloves minced
- 2 tsp dried oregano
- 1/4 cup crumbled reduced fat feta
- 1/4 cup freshly chopped parsley

- Preheat oven to 400ยบ
- Combine lemon, olive oil, chicken broth, small, garlic and oregano is a large mixing bowl.
- Reserve 1/4 cup of liquid
- Cube potatoes and toss well in bowl with liquid
- Spread potatoes in one layer on a rimmed baking sheet
- Bake for 45 minutes, flipping potatoes half way through.
- When done cooking, toss with left over lemony liquid, feta and parsley
- Serve warm.

- The liquid will start to brown on the baking sheet, but that's ok. It will require a little extra soaking afterwards, but this is how the potatoes get nice and crispy.
