Pea Pesto
Put this pesto on top of pretty much any bread and you have a healthy and colorful appetizer.

Put this pesto on top of pretty much any bread and you have a healthy and colorful appetizer.

Ingredients
Servings: crostini
Instructions
  1. Start by making a garlic and red pepper infused olive oil. Over medium heat, warm olive oil. Add garlic and red peppers and cook for 1-2 minutes. Make sure not to burn the garlic. Let cool completely.
  2. Toast nuts in oven or in saucepan until fragrant.
  3. Add infused olive oil and all other ingredients into a food processor and blend until smooth but a little chunky.
  4. If you don't have day old bread, toast slices at 300º for 5 minutes. First spraying each side with olive oil spray.
  5. Spoon a healthy amount onto each sliced bread and top with tomato.
  6. For an extra garlicky bite, gently rub each crostini with garlic before spooning on pesto.

*This can be tossed with pasta for a delicious side dish.  Throw is some extra veggies and a protein and you have a quick and easy dinner.
