Ingredients
- 1/3 cup olive oil
- 2-3 garlic cloves
- 1/8 tsp crushed red pepper
- 10 oz frozen peas thawed
- 1/4 cup pine nuts or walnuts toasted
- 1/3 cup Parmesan or Pecorino Romano grated
- 2 tsp lemon juice
- 1 loaf French baguette Day old
- 10 cherry tomatoes Sliced
Servings: crostini
Instructions
- Start by making a garlic and red pepper infused olive oil. Over medium heat, warm olive oil. Add garlic and red peppers and cook for 1-2 minutes. Make sure not to burn the garlic. Let cool completely.
- Toast nuts in oven or in saucepan until fragrant.
- Add infused olive oil and all other ingredients into a food processor and blend until smooth but a little chunky.
- If you don't have day old bread, toast slices at 300º for 5 minutes. First spraying each side with olive oil spray.
- Spoon a healthy amount onto each sliced bread and top with tomato.
- For an extra garlicky bite, gently rub each crostini with garlic before spooning on pesto.

*This can be tossed with pasta for a delicious side dish. Throw is some extra veggies and a protein and you have a quick and easy dinner.
