I love salt and vinegar potato chips, but these are so much healthier. If you've never tried kale chips, I promise you'll be surprised at how tasty AND EASY they are.

  1. Preheat oven to 375˚
  2. Wash and dry kale thoroughly
  3. Separate kale leaves from center rib and tear into potato chip sized pieces
  4. Add all ingredients into a large bowl and mix well with hands, for about 30 seconds to really incorporate the oil and vinegar
  5. Place chips onto a baking sheet lined with parchment paper. Make sure kale is in a single layer, you might need two baking sheets.
  6. Bake for 10-12 minutes until nice and crispy.
Recipe Notes

I would say this serves 4 if you are entertaining and have other appetizers, but Frank and I easily can down this whole recipe in one sitting.
