Ingredients
- Meat Marinade
- 1 lb meat cubed
- 2 canned chipotle peppers seeded and minced
- 1 tbsp Adobo sauce included with canned chipotle peppers
- 1 Lime Zest and Juice
- 1/4 cup olive oil
- 1 tbsp Agave nectar or honey
- 2 garlic cloves minced
- 2 tsp chilli powder
- 1 tsp paprika
- 1 tsp cumin
- 1/4 tsp cayenne pepper
- salt and pepper
- Chipotle Avocado Sauce
- 1 Avocado
- 1 Lime zest and juice
- 2 large garlic cloves minced
- 1/2 cup non-fat greek yogurt
- 1/4 cup cilantro
- 1-2 canned chipotle peppers seeded (the more you add, the spicier the sauce)
- 1 1/2 Tbs Adobo sauce
- salt and pepper
Servings: pound of meat
Instructions
Meat Marinade
- Add all ingredients (other than meat) to a large bowl.
- Season meat with salt and pepper than add to marinade and mix until everything is well coated.
- Marinate for at least 30 minutes, but the longer the better.
- Soak skewers in water while the meat marinates.
- Skewer meat and vegetables (or pineapple).
- Grill until meat is cooked through.
- Top with freshly chopped cilantro and Avocado Chipotle Sauce.
Avocado Chipotle Sauce
- Add all ingredients to a food processor and pulse until smooth.

I skewer pineapple in between each piece of meat, it gives the dish some nice sweetness. However, any vegetable would work too...or just the meat. It can be served with tortillas or on rice, but I love it just with the meat and sauce.
