Ingredients
- 1 10oz package frozen chopped spinach thawed and drained
- 1 14oz can artichoke hearts drained and chopped
- 1/2 cup 2% plain greek yogurt or 6oz container
- 1/4 cup reduced-fat mayonnaise
- 1/4 cup fat-free cream cheese
- 2 garlic cloves finely minced
- 3 green onions chopped
- 1/2 cup skim mozzarella cheese shredded
- 1/2 cup spicy cheese pepperjack or habanero
- 1 tsp tabasco optional
- salt & pepper
- parmesan cheese optional garnish

Instructions
- Preheat oven to 350º
- Drain artichoke hearts and finely chop. This is much easier to do in a food processor vs chopping with a knife.
- Squeeze all of water out of the spinach. If you have the food processor out...give spinach a couple pulses.
- Place spinach and artichoke hearts in a large bowl with all other ingredients, minus the parmesan.
- Mix everything well and transfer to a greased casserole dish, top with some grated parmesan. *Save about a 1/2 cup to make Spinach Artichoke Stuffed Chicken
- Bake for 25 minutes until bubbly.

**You can find Cabot Hot Habanero Cheddar Cheese at Costco. It's AMAZING.
**Best way to drain spinach is to place it in a dish towel and squeeze all the water out. WARNING: it will stain the kitchen towel..so use a dark colored one or one you don't care for.
