Spicy Spinach Artichoke Dip

  1. Preheat oven to 350º
  2. Drain artichoke hearts and finely chop. This is much easier to do in a food processor vs chopping with a knife.
  3. Squeeze all of water out of the spinach. If you have the food processor out...give spinach a couple pulses.
  4. Place spinach and artichoke hearts in a large bowl with all other ingredients, minus the parmesan.
  5. Mix everything well and transfer to a greased casserole dish, top with some grated parmesan. *Save about a 1/2 cup to make Spinach Artichoke Stuffed Chicken
  6. Bake for 25 minutes until bubbly.

**You can find Cabot Hot Habanero Cheddar Cheese at Costco.  It's AMAZING.

**Best way to drain spinach is to place it in a dish towel and squeeze all the water out. WARNING: it will stain the kitchen towel..so use a dark colored one or one you don't care for.
