*Best way to drain spinach is to place into a dish towel and squeeze all the water out. WARNING: it will stain the kitchen towel..so use a dark colored one or one you don't care for. I sometimes just use a paper towel too.
*Phyllo dough should be kept in the fridge until the last minute. The warmer the dough gets, the more likely it will stick together...which is super annoying.
*Phyllo dough can come in different sizes. If needed, cut the dough in half to fit into the 13x9 dish, but some brands come in two different packages, pre-cut to the correct size.
