  1. Preheat oven to 350º
  2. Thaw spinach and dough overnight in the fridge. If the phyllo is thawed too quickly it becomes very hard to handle.
  3. Squeeze all the water out of spinach and place into a large bowl
  4. Add all other ingredients up until phyllo dough to the bowl and mix well, set aside.
  5. Take only half of the phyllo sheets out of the fridge.
  6. Grease the bottom of a 13x9 baking dish with melted butter
  7. Carefully begin layering phyllo sheets. Place one sheet of dough in baking sheet and lightly brush with butter. Place next sheet on top, repeat until you go through half the sheets.
  8. One stick of butter should be plenty, so go easy at each layer.
  9. Pour the spinach mixture on top of the phyllo and evenly spread.
  10. Take rest of sheets from fridge. Place phyllo sheet on top of spinach layer and repeat layering, brushing with butter in between each sheet.
  11. Once finished with layering all the phyllo sheets, carefully cut only the top layer of phyllo into 8 pieces.
  12. Bake for 35-45 minutes until dough is browned and flaky.
  13. Let cool for about 10 minutes before servings.

*Best way to drain spinach is to place into a dish towel and squeeze all the water out. WARNING: it will stain the kitchen towel..so use a dark colored one or one you don't care for. I sometimes just use a paper towel too.

*Phyllo dough should be kept in the fridge until the last minute.  The warmer the dough gets, the more likely it will stick together...which is super annoying.

*Phyllo dough can come in different sizes. If needed, cut the dough in half to fit into the 13x9 dish, but some brands come in two different packages, pre-cut to the correct size.
